To batch a cocktail, multiply the recipe by the number of drinks, add about 20 to 25% water (unless you'll shake or pour over ice), chill it well, and add bubbles only at the last moment. Then you can pour great drinks in seconds and actually enjoy your own party.
Step 1: Pick the Right Drinks
Some drinks batch beautifully. Others don't.
Great for batching:
- Stirred, spirit-only drinks: Negroni, Manhattan, Old Fashioned. They keep for days.
- Highballs: Paloma, Moscow Mule. Batch the base, add the fizzy part per glass.
- Punches: Planter's Punch, Pisco Punch. Made for sharing.
- Spritzes: Aperol Spritz, Russian Spring Punch.
Harder to batch:
- Drinks with egg white (they need a hard shake to foam).
- Blended or frozen drinks (they melt fast).
- Drinks with fresh herbs muddled in (the herbs turn brown and bitter after a few hours).
Step 2: Scale the Recipe
Multiply each ingredient by the number of drinks. For 10 Negronis:
- 300 ml gin
- 300 ml Campari
- 300 ml sweet vermouth
Tip: make about 1.5 drinks per guest for the first two hours, then about one drink per guest per hour after that.
Step 3: Add Water (The Secret Step)
When you shake or stir a single drink, melting ice adds water. That water is part of the recipe. It softens the alcohol and balances the flavors. A batched drink poured straight from the fridge misses it and tastes harsh.
How much water to add:
| How you'll serve it | Water to add |
|---|---|
| Straight from the fridge or freezer into a glass, no ice ("up") | About 20 to 25% of the batch volume |
| Poured over ice in the glass | About 10 to 15% |
| Shaken to order with ice | None |
For the 10 Negronis above (900 ml), served over a big ice cube, add about 100 to 130 ml of water.
Step 4: Handle Citrus Carefully
Fresh lemon and lime juice start losing their brightness after a few hours. For the best taste:
- Squeeze citrus the same day, ideally within 4 to 6 hours of the party.
- Keep citrus batches cold.
- For drinks like the margarita, you can batch the spirit and liqueur days ahead and add fresh juice on the day.
Step 5: Keep the Bubbles for Last
Never batch soda, tonic, ginger beer or sparkling wine with the rest. They go flat. Instead:
- Fill each glass with ice.
- Pour in the batched base.
- Top each glass with the bubbly part.
Or, for a punch bowl, add chilled sparkling ingredients right before guests arrive.
Step 6: Chill Everything
- Put the batch in the fridge for several hours, or the freezer for stirred drinks with no juice (high alcohol keeps them from freezing solid).
- Chill your sparkling wine and mixers too.
- Buy more ice than you think: about 0.5 to 1 kg per guest.
For punch bowls, use one big block of ice. Freeze water in a loaf pan or bowl the day before. It melts slowly and keeps the punch cold without watering it down.

Batching FAQ
How far ahead can I batch cocktails? Spirit-only stirred drinks: days or even weeks in the fridge. Drinks with fresh citrus: the same day.
Should I add ice to the pitcher? No. Ice in the pitcher melts and waters everything down. Put ice in the glasses instead.
How do I serve batched drinks "up"? Add 20 to 25% water, chill the batch in the freezer, and pour straight into chilled glasses.
