Good to know
- Use freshly squeezed juice — bottled tastes flat.
- Add the fizzy mixer last so it keeps its bubbles.
History
Mexico's everyday favourite, the Paloma pours tequila over grapefruit soda with a squeeze of lime and a pinch of salt. Its name means "dove," and its origins are hazy, though it seems to date from the mid-20th century. More refreshing and less sweet than the Margarita, it is what many Mexicans actually drink. It is the ideal warm-weather tequila highball.
