Good to know
- Sieve the purée after blending — seeds ruin the texture and clog the flute.
- Use ripe fruit only; underripe strawberries need sugar and then it stops tasting fresh.
History
PlaceVenice, Italy
The strawberry member of the Bellini family, named for the composer Gioachino Rossini and listed in the Bellini family alongside the Puccini and the Tintoretto. Ripe summer strawberries make it; out of season it turns thin and pale. Venice treats it as the warm-weather answer to the peach original.
